How to Season Yixing

And other porous clay teaware

Yixing pots will drink the tea

Porous clay pots like those made with Yixing clay have the ability to become seasoned. This means that the more you use them, the more flavor the pot soaks up. After many years, you will be able to pour water into the pot and pour out tea.

-1-

choosing the right clay

Before using your new teapot for the first time, you will have to decide which type of tea it will be used for. Because it will acquire the flavor of each tea, it is best to dedicate each pot to a certain style of tea.

Every clay has different minerals and properties. These will effect the teas your drink differently.

-2-

Season your pot

Once you have determined which tea it will be used for, follow these steps:

first the rinse

When you first bring it home, rinse it with hot water and then cold water.  This should wash away the clay smell.

boil your pot

Gently lower the teapot into a clean pot of gently boiling water.  Keep the lid separate and do not let it touch the bottom, as the bubbles might jiggle it too much.  Allow it to sit in the boiling water a few minutes, then remove and let it cool completely.

Choose your tea

To season, add your tea of choice to the pot and steep.  Pour the tea into a small bowl after about 30 seconds and steep the leaves again.  Repeat this process until the bowl is full.  You can then remove the leaves and soak the pot and lid separately in the brewed tea.  Let it soak until it has cooled.

aftercare

Always let the pot and lid dry completely before putting the lid on.  Over time, your pot will develop more color and aroma, but it will not be unpleasant.  When properly cared for the clay will prevent any bacteria from forming.

Never use soap or abrasives when cleaning your teapot.

what about...

It happens to the best of us. You forgot to rinse the pot after using it, and now your tea leaves are moldy.

Rinse the pot with boiling water and repeat the process.
